Thin crepe style pancakes for breakfast? Easy. You can skip the sugar in the batter if you want to add savoury toppings, and these even freeze well too. Make a batch and then pack half up in the freezer for a lazy breakfast another day. Use a layer of baking paper between each so they don't stick. 


  • 400ml of any kind of milk 
  • 1 tsp vanilla extract
  • 20g butter or margarine
  • 175g plain flour
  • 1 tsp baking powder
  • 1 tbsp sugar


  1. Melt the butter and mix in with milk and vanilla 
  2. Mix the remaining dry ingredients in a separate bowl 
  3. Mix the wet ingredients into the dry, whisking well
  4. Pour by the spoonful into your pan, swivel around to spread as thinly as possible
  5. Flip! Decorate! Eat!
