Broccoli is the perfect roasting veg, its florets absorb oil and crisp up beautifully and the all too often discarded stems add some tantalising crunch. In this recipe it is paired up with other perfect roasting veg and an amazing tahini sauce.

Ingredients (serves 4)

  • 1 large head broccoli, cut into florets and stalk chopped into bite size chunks (cauliflower works equally well)
  • 4 carrots, cut into long wedges
  • 1 red chilli, cut into slices (leave the seeds in if you like spice)
  • 1 red onion sliced
  • 1 400 grams tin of chickpeas, washed and drained
  • 3 tablespoons oil (olive, vegetable or sesame work well)
  • 3 tablespoons tahini
  • Sea salt and cracked black pepper
  • Chopped parsley, to serve (optional)

Tahini Sauce

  • 2 tablespoons tahini (use yoghurt, creme fraiche or sour cream if you can't get tahini)
  • Squeeze of lemon juice
  • 2 teaspoons Ras el Hanout (if you don't have this, try a teaspoon of curry powder)
  • Sea salt and cracked black pepper


  1. Preheat the oven to 200 celsius.
  2. Prepare the broccoli, carrots, chilli, red onion and chickpeas as described above and put in a roasting tray add 3 tablespoons of the oil and three tablespoons of tahini and a big pinch of sea salt and cracked black pepper. Mix all together really well. Then roast in the oven for about 25 minutes or until the ingredients is golden. Shake the tray a couple of times to ensure the veg cooks evenly.
  3. To make tahini sauce - whisk together all the sauce ingredients with up to 1/2 cup cold water in a bowl until you have a ketchup type consistency, season to taste with sea salt and cracked black pepper.
  4. Transfer the roasted vegetables to a platter, and drizzle with tahini sauce just before serving. Sprinkle with chopped parsley if you like.

Food savvy tip

If you have leftover veg like  courgettes or peppers, then you can roast these instead of the broccoli and carrots or as well as. Mix up the ingredients in this recipe to your own flavours and what you have available.
