Perfect for packing some colour into your picnic or when you're heading back into the office. Layering your salad into a mason jar saves on money, plastic, and makes your salad looks great. You can switch your ingredients to foods of a similar colour you prefer, but our recommendations below pack a tasty punch.

Ingredients (adjust ingredients to serve as many as you like)

  • Black olives, sliced
  • Red peppers, chopped
  • Cherry tomatoes, quartered
  • Grated carrot
  • Sweetcorn
  • Lettuce or rocket leaves, sliced
  • Beetroot, sliced thinly
  • Dressing of your choice
  • Mason jars

  1. Chop and prep all your salad ingredients in advance and get your mason jars in a line.
  2. Begin layering your salad with the colour you want at the bottom and working your way up. If you're substituting ingredients try to keep the drier ingredients towards the top and things like dressing towards the bottom. This helps keep your ingredients crisp until you're ready to mix them.
  3. Fill all the mason jars until you're happy with their look and store in the fridge until you're ready to eat.
