You eat with your eyes first, and these pitta pizzas are a colourful way to eat the rainbow and of course use up your leftover veg.

Ingredients (serves 2)

For the base

  • 2 wholemeal pitta breads
  • 4 tablespoons of tomato pasata


Get creative with leftover vegetables in your fridge and add to the layer of your choice. Suggestion for inclusive flag version below, but get creative and use any pride flag. 

  • Black & brown section - black olives and mushrooms, sliced
  • Red - red peppers, sliced
  • Yellow – cheese and sweetcorn
  • Green – basil, leaves picked
  • Blue and purple - red onion, sliced


  1. Preheat oven to 180 celsius.
  2. Spread 2 tablespoons of tomato pasata over each pitta bread until desired number of pitta's prepared.
  3. Chop and begin adding your ingredients in sections. If using basil add once pizza is fully cooked, leave a gap.
  4. Bake until cheese is melted begins to brown.
  5. Add basil if desired.
