A favourite at family feasts, this no-bake cheesecake recipe can be given a rainbow twist using either food colouring or confetti sprinkles. 


For the base 

  • 150g digestive biscuits crushed into crumbs
  • 80g melted butter

For the filling

  • 220ml heavy cream
  • 500g cream cheese
  • 75g sugar
  • 45g sour cream
  • 1 tsp lemon juice
  • Splash of vanilla extract
  • 3-6 Food colourings (blue, purple, yellow, orange, red, green)

If you don’t have food colouring, you can mix a handful of sprinkles into your cheesecake filling instead, to create a rainbow confetti cheesecake :)


  1. Mix the crust ingredients together and pack tightly down at the base of your dish
  2. Whip the heavy cream until it turns into stiff peaks (could take a while if whipping by hand!)
  3. Mix all the other filling ingredients until smooth and combined
  4. Slowly and gently fold in the whipped cream to the filling mix.
  5. Separate the filling into as many bowls as you have different food colourings.
  6. Add a drop of food colouring to each, to make different colours.
  7. Layer the fillings one by one in your dish, to make stripes of coloured filling. 
  8. Set in the fridge overnight and store in the fridge after for up to 5 days.
