Oladushki s jablochnim pripekom? Please, let us translate. These are very plump pancakes with a hidden fruit filling. Typical Russian Dacha summer eating. By Russian Revels. 

Ingredients (Makes about 25-28 mini pancakes)

150g self-raising flour

350ml kefir (traditional Russian soured milk drink) 

2 medium eggs

3 tbsp caster sugar

1 tsp baking powder

A pinch of salt

2 -3 apples (sweeter and softer variety) sliced and sprinkled with 2 tbsp of caster sugar, 2 tbsp vanilla essence, juice of half a lemon. (Optional: 2tbsp of brandy) 


  1. Peel and core apples. Slice them thinly and sprinkle with sugar, vanilla essence, and lemon and brandy if using. 
  2. Make the batter. My method is to beat eggs in a mixing bowl first. Add sugar and salt and keep on whisking. 
  3. Then start alternation pouring kefir and mixing in flour mixed with baking powder using a hand whisk. 
  4. The batter should resemble sour cream in consistency, not as thin as for regular pancakes. 
  5. Heat a pancake pan on high and then keep it in medium to avoid burning mini pancakes. 
  6. Use a bit of vegetable oil before frying each batch.
  7. Use a tablespoon of batter for one pancake.
  8. Put a slice of apple in the middle of a pancake. Then carefully flip it over and fry on the other side.
