A delicious mushroom and borlotti filling to warm your's and your loved ones cockles on even the coldest day. The filling can be changed to suit what you have available and what you love to eat. Have a fridge forage and add a limp leek or some floppy fennel.

 

Ingredients (Serves four)

  • 2 tbsp oil (olive or vegetable) 
  • 5 shallots, sliced (or a couple of onions) 
  • 2 garlic cloves, sliced 
  • 400g of mushrooms, sliced (whatever you have - shiitake are great but so are chestnut) 
  • Half a bottle of red wine or a generous splash of port (optional) 
  • 400g of tinned borlotti beans, rinsed
  • 1 tbsp of mixed spice 
  • 3 carrots, grated 
  • 250ml vegetable stock 
  • 1 tbsp mixed chopped herbs (rosemary, thyme and sage all work well) 
  • Sea salt and cracked black pepper   
  • Rough puff pastry or shop bought puff pastry for a vegan alternative. 

Method

  1. Heat the oven to 180 celsius. 
  2. Prepare all ingredients as shown in the ingredient list. Place a medium-sized pan over a low-medium heat and add oil. Add the shallots and garlic and sweat until soft but not coloured 
  3. Add the mushrooms along with the mixed spice, continue cooking for 7 minutes until the mushrooms have reduced in volume by about half. Pour in the half bottle of wine or a splash of port if using and reduce until the mix is sticky and thick, but not dry, if not using move on to the next step. 
  4. Add the carrots. Pour in enough stock to just cover the ingredients. Cover the pan and simmer for 5 minutes. 
  5. Add the beans, herbs and season with salt and pepper to taste. Remove the pan from the heat and leave to cool slightly. Get your pie dish out and ready to use.
  6. Roll out the pastry big enough to cover your pie dish. If you’re cooking for a loved one why not save a little pastry to make a heart to stick on. Place all the cooked ingredients in a pie dish and cover with rough puff or puff pastry, crimp down the edges. And paint the top with an egg yolk or oil. 
  7. Bake in the oven until golden and the pastry has cooked through this should be about 30 minutes.
