These beauties are a delicious way to use up leftover mash potato and any eggs that need using up.

Ingredients (serves 2)

  • 2 hard boiled eggs
  • 225 grams mashed potato
  • 15 grams butter
  • 60 grams grated cheddar cheese
  • 1tablespoon chopped chives (or spring onion tops) Salt and pepper
  • 1 egg, beaten
  • Breadcrumbs
  • Oil for frying


  1. Mix mashed potatoes, butter, cheese, chives, salt.
  2. Turn onto a floured board and divide into two.
  3. Flatten to a round and enclose the egg totally.
  4. Roll in the beaten egg, then in the breadcrumbs.
  5. Cool for 1⁄2 hour in the fridge to stiffen up a little.
  6. Put about 4 cm of oil in a suitable sized saucepan. Heat until fairly hot. Gently lower the scotch eggs into it, and fry, occasionally turning gently, until golden brown all over.
