You can wrap large potatoes in tin foil and cook them in the oven but unless you are baking a lot at once, this method takes a great deal of time = a great deal of electricity. It’s better to use the microwave, even if you have to cook the potatoes one at a time.

Ingredients (serves 1, but you can make as many as you like)

  • 1 large potato
  • Optional toppings - a bit of butter, baked beans, grated cheese, tuna mayonnaise , leftover curry or chilli or whatever you like

  1. Do not peel the potato.
  2. Wash it and remove any sprouting bits.
  3. Don’t dry the potato, just wrap it in kitchen towel.
  4. Place on a plate and microwave for about 8/10 minutes, depending on the size of the potato
  5. Test with the point of a small knife to ensure the potato is cooked.

Food savvy tips

  • After cooking potatoes in the microwave, pop them under the grill for a few minutes to crisp the skin.
  • After cooking the potatoes, you could wipe down the inside of the microwave with the used kitchen towel. Why waste a clean sheet?
