What's your main area of work at Hubbub?

I lead the food team at Hubbub, with a broad focus on tackling food waste and helping people access and enjoy lower impact diets. Our work includes the ever expanding Community Fridge Network, a low carbon redistribution service, community kitchen builds, and innovative sustainable diets campaigns in partnership with some of the UK's biggest food businesses.

What's your favourite campaign and why?

Beyond food, I'm really inspired by #WhatsInMyWash. The environmental and social impact of fast fashion is huge but hidden and needs a good airing.

What did life before Hubbub look like?

I spent my early career in government and NGOs focussed broadly on human rights before retraining as as chef. Before joining Hubbub I was a chef and cooking tutor at Dublin's fabulous Fumbally Café, ran cooking classes with young people experiencing homelessness and addiction, and helped set up some small food businesses in Dublin.

What else are you passionate about?

When I'm not cooking or fermenting something, you'll find me reading or listening to history podcasts.

What would you eat if you only had one meal left?

I might want Galway Bay oysters or Koka noodles, depending on the day.

Who’s your Eco crush?

Crush mightn't be the most apt description here! But I'm thrilled by the work of my my sister and her colleagues in the Irish Green Party. They're in a coalition government and progressing a green agenda that's also socially and economically just.
