Looking for a swap for the usual tuna sweetcorn? Try this 5 minute lunch filling, perfect for sandwiches, wraps, or a side salad! Can be made plant based with one swap of the mayo, and you can add other bits and bobs in if you like! Try celery for a crunch, or tomatoes/cucumber for more juiciness. 

Ingredients

  • 1 tin of chickpeas
  • 1 small tin sweetcorn
  • 1/2 red onion
  • 4 tbsp mayonnaise or vegan mayo (Hellmans, vegannaise)
  • 1 tsp mustard
  • 1 tbsp chopped up capers/pickles/olives/gherkins for tanginess
  • Pinch of Salt and pepper

Method

  1. Drain and rinse the chickpeas into a bowl
  2. Mash the chickpeas roughly with a fork 
  3. Drain and rinse the sweetcorn and add in
  4. Mix in all the other ingredients! 
  5. Chill in the fridge
