Chickpea "no tuna" sweetcorn salad Looking for a swap for the usual tuna sweetcorn? Try this 5 minute lunch filling, perfect for sandwiches, wraps, or a side salad! Can be made plant based with one swap of the mayo, and you can add other bits and bobs in if you like! Try celery for a crunch, or tomatoes/cucumber for more juiciness. Ingredients 1 tin of chickpeas 1 small tin sweetcorn 1/2 red onion 4 tbsp mayonnaise or vegan mayo (Hellmans, vegannaise) 1 tsp mustard 1 tbsp chopped up capers/pickles/olives/gherkins for tanginess Pinch of Salt and pepper Method Drain and rinse the chickpeas into a bowl Mash the chickpeas roughly with a fork Drain and rinse the sweetcorn and add in Mix in all the other ingredients!
