No rice? No problem! Cauliflower is such a versatile vegetable one of our favourite things to do with it is to turn it into ‘rice’ – fewer air miles, and more flavour.

Ingredients (serves 4)

1 medium cauliflower 


  1. Cut the leaves from the cauliflower (these can be washed and chucked into a stir fry) and pulse the rest in a food processor or grate on a course grater.
  2. You can then either roast this with a little oil or steam as is for five minutes.

Hard core want more? Serve with a delicious Thai pumpkin curry or three bean Mexican chilli.
